When Quat Bek Makhum took over Beikos Mediterranean Cuisine, he didn’t draft a business plan for hospitality or attend seminars on customer service. The way he runs his restaurant comes from instinct, tradition and an old-fashioned desire to see people happy—and with empty plates.
“I always say, if the plates come back empty, that’s the only thing I want to see,” Makhum laughs. “If there’s a leftover, I’ll go ask them —‘Did you like it? Was something missing?’ I don’t want to throw food away. If you leave a clean plate, it means we did our job.”
Born in Mongolia, Makhum spent years in Turkey before settling in Houston. His menu reflects that layered identity: Turkish Mediterranean classics like kebabs, araynes, and baklava, alongside Central Asian touches in spices and meat preparations. “We are meat people,” Makhum says, grinning. “Kazakh, Turkish—we speak different languages, but we understand each other when it comes to good food.”
The restaurant’s welcoming atmosphere extends beyond the dishes. There’s a small kids’ corner stocked with toys and coloring books, born out of Makhum’s own experiences as a father. “When you have two or three kids at a table, the mom’s meal always goes cold,” he says. “So, we made a corner. It’s not big, but it gives the mothers a few minutes to enjoy their food hot, while the kids play. You won’t find that in most Mediterranean places, but you will here.”
Makhum is also known for sitting with guests, listening more than talking. “I might not be a good speaker, but I’m a good listener,” he admits. “And every time we talk, it gives me energy. That’s our culture—you don’t eat alone, you share. You don’t stay a stranger. Even if you’re shy, you smile first.”
On Mother’s Day, Makhum plans to offer a $20 buffet from 9 am to 2pm, and fresh flowers to every mother who visits, just like he did on International Women’s Day. “You can cook with the same ingredients, but the intention makes it taste different,” he says. “The most important thing is the intention.”
He gestures to the restaurant’s turquoise wall panels and hand-carved decor, a visual tribute to the cultures stretching from Morocco to Kazakhstan. “We’re all connected. This restaurant is my way of keeping those connections alive.”
